Not flat, not good.

For those using induction cook tops, nice steel pans with flat bottoms are critical. I bought the 14" pan. Perhaps mine is an anomaly, but it is not perfectly flat on the bottom. Stupidly, I tried to use it anyway. Upon being heated the bottom curved a bit more resulting in a pan that swivels like a merry-go-round on the induction top. It worked okay in terms of heating and the food cooked nicely. The non-stick performed exactly as anticipated. But my Hex Clad pans and skillets remain flat. This one does not, and becomes nearly unusable. I should have returned it prior to using it, because it just didn't seem quite flat enough. Too bad, because it seems to be a good value. Having used Hex Clad, I knew what to expect in terms of sticking (it isn't like a brand new Teflon/PTFE or ceramic cookware... which is why it browns foods better!). I am happy with the surface in terms of the non-stick. It is the bottom shape. If you happen to have a gas cook top or old coil range, this pan may be awesome for you! But if you have a traditional glass cooktop or glass cooktop with induction (like mine), it just isn't good. Again, mine might be the exception. Perhaps all the others are perfectly flat and mine was the stinker of the lot!
