I have used my Gotham Steel 11-inch skillet nearly every morning since my purchase 3 months ago. I prepared the pan as per instructions, and have used it faithfully following suggestions in other reviews and from the manufacturer. I only use it for my egg-white omelets - same EVERY day. I saute some spinach in butter, add egg whites, and top with avocado and a small amount of diced meat. I use medium heat (lower heat than with my other omelet pans). This has worked perfectly until a week ago. Now my omelets have begun to stick. The skillet still cleans up well, but the omelets no longer slide out perfectly as before. I wish the perfection had remained. I still will use my pan, but wish it had lasted longer!

This pan's food sticks AND cleaning leaves scratches!

I ordered both the 9 inch and 11 inch pans last summer. The smaller pan is a true 5 star product. I've been cooking with it regularly for 9 months now, on the stove and in the oven, and the product performs exactly as it does in the commercials. The food always turns out perfectly, and the cleaning is a breeze.But this review is for the large, 11 inch pan...and it easily receives only one star. From its very first use, the food...any food...sticks. I soak it, I scrub it, and I eventually get it clean, only to have to repeat the process again every time I use it. Scrambled eggs stick, bacon sticks, and hamburgers and steaks not only stick but they leave a mess that requires scrubbing. And the scrubbing, with a stiff sponge, leaves permanent SCRATCHES. I still use the pan, but I spray it with Pam, which helps.Since the 9 inch pan cooks and performs perfectly, I think the 11 inch pan is simply defected. The Gotham Steel Company obviously knows how to make a good product; somehow someone just screwed up on the large pan. And I purchased these two products because I really needed the large pan the most.I should have returned the product since returning an Amazon product is so easy, but the pans arrived just as I had to enter the hospital for knee surgery. By the time I was able to try to drive so that I could mail back the product, the Amazon deadline for returning the pan had past.
