A good knife is a lifetime investment. The Zwilling J.A. Henckel knife line has put the quality, function, handling, and precision ahead of all other knife competitors. The Zwilling Pure series knives have a Synthetic soft touch handle and are precision forged from on-piece of steel. The Zwilling Pure line has a 15 degree angle on each side of the blade, making it a total of 30 degrees for the entire blade. Zwilling Pure knives have 57 Rockwell hardness and are built to last. The knives are forged in heat up to 1800°F and then are quickly cooled down to room temperature. The FRIODUR ice-hardened blade is to freezing temperatures of -94° F for enhanced corrosion resistance. Then they are double tempered to just below -480° F to improve toughness. The special formulated steel makes the edge.
