With this philosophy at Avgvstvs Forvm Winery, we have created FORVM Arbequina to conquering the most demanding palates arround the world.

Our goal was to go beyond creating a quality olive oil. At Forvm we have innovated to surprise our consumers by creat- ing an olive oil that manages to maintain its quality (as freshly produced) throughout the year. To achieve this, we have used an elaboration process that radically breaks with the standards used until now in the world of olive oils.

EVOO FORVM Arbequina is an Extra Virgin Olive Oil elaborated exclusively with early harvest Arbequina Olives. The olives are picked during October when they are totally green and unripe.

Thanks to this, we achieve that the olives have a smaller size, have more concentration, less acidity and less water.
At that point, the olive is very fresh and the yield of olive oil is very low (always under 15%).

The olives are quickly transported to the mill, to be processed into extra virgin olive oil urgently. The process is fast and we use an innovative technology that consists of laminating the olive instead of pressing it. This way we manage not to break the bone of the olives, which would give us excessively bitter notes.

We mill the olives in few hours from when they have been collected in the farm. So, we avoid oxida- tion and we gain in aromas and final quality of the olive oil.

We also avoid any contact with temperature to maintain maximum freshness. During the milling pro- cess, the olive temperature never rise from 26 degrees Celsius. In fact, we are working to incorporate very soon technology of latest generation, which will allow us to work during the production process without oxygen and at very low temperatures of 23 degrees.
All this thorough process during the harvest and milling, combined with green/fresh Arbequina ol- ives, brings a unique extra virgin olive oil. The product obtained is green/gold scented extra virgin. A dense oil with a thick texture, with a high level of fruitiness and nice balance between sweetness and spiciness.
We are also working to get the organic certification for our Forvm Arbequina.

To keep the maximum properties and stability during the year, the olive oil just produced it is fastly ultra frozen to -50Co by this way, we manage to set and maintain quality parameters (smell, taste, nutritional and organoleptic properties) over time, unlike the rest of the oils on the market that evolve and lose properties as the months go by. When we have to prepare an order, we just defrost the quantity needed to pack the product to be delivered to our customers.
This is a unique process, which guarantees maximum freshness during the whole year.
The extra virgin olive oil obtained has low acidity between 0,20% and 0,25%.
The oil is recommended to be used raw, in salads, vegetables, fish and toasts or just for dipping with bread.
